Itemize is a mod about turning mobs into items, as simple as that. It allows you to battle those mobs against each other, enchant them, and even reap their souls. The ITEM™ corporation promises that all it's technology is entirely scientific and humane, mostly.

Currently there isn't an ingame guide, but it is planned. In the meantime, here's a general guide:
First, craft the vacuum to collect dusty mob souls. The vacuum works on any mob with less than 2.5 hearts, though it might be a challenge to hold a mob for a long time ;)
After washing those souls (dropping them in water), you can craft most of the items in this mod, JEI or another recipe viewer will help here.
You'll likely want a ITEMizer™ first, it'll collect mobs on top of it and turn them into items. First, only have to make its casing, then use some Worm Food to attract our transdimensional worm. It's collection radius can be increased by adding more casing below it. Also, applying a nether star to it will increase it's range to the surrounding 5 chunks.
Then, a ITEM™ Soul Extractor can collect souls out of placed mobs (shift click), which will help you get a ritual tablet, a manual way to turn mobs into items.
From there, your options open up quite a bit. You can use a ITEM™ Soul Inserter to create much more powerful mobs with high drop rates (insert souls using a hopper into the Soul Inserter). Or, you can use the ITEM™ Mob Colosseum to battle mobs together so you don't have to battle them yourself. Many mobs have unique behaviors here so player around and see what they do!
There's also the ITEM™ Mob Enchanter, placing the items and a mob in allows you to enchant it by right clicking it with a ritual tablet. The various enchantments have their descriptions listed in JEI, or if you've played Minecraft Dungeons before, many of them are quite similar (and share sprites).
Finally, a small note, all of the blocks in this mod are completely automatable, either with some configuration of hoppers, or in the case of the ITEM™ Mob Enchanter, a redstone pulse. Also, many machines can be disabled with a redstone signal.
